MAYDAY event 2005

Lady Estela and I, Cristiana, decided to do a Mediterranean feast this time. So we sat down with A Taste of Ancient Rome by Ilaria Gozzini Giacosa for an example menu. For the first remove or Gustum as it was known as consisted of appetizers, such as olives, roasted dormice in a honey and poppy seed sauce, sausages and figpeckers in shells made of pastry. The second remove or Mensa Prima consisted of mostly meats, well actually all meats like chicken, hare, sow’s paps, and fish in a spicy sauce. You would think that was enough but there was more, roasted pig stuffed with sausages and blood sausages, and then to conclude the course, there would also be an entire boiled pig. To conclude the meal, the third remove or Mensa secunda consisted of fruit and various cakes.

So, with this menu in mind, Estela and I came up with the following idea for a menu. For the Mensa Prima, since it would be all meat dishes, we decided to add some vegetable dishes for a bit of variety.
