Fried Mushrooms

To dresse mushromes

Make the mushromes very cleane, and seeth them with two or three head of Garlike, and crummes of bread, this is done because naturally they are venomous, then take them up, and let the water runne out of them until they be dry, then friy them in oyle and when they are fried, cast pepper and other spices on them, in flesh time fry them as aforesaied, You may dresse them another way, make them very cleane, then set them on fire, putting to them larde and Garlike beaten together, with pepper, you may likewise dresse them with oyle, you may fry them also in a frying pan like a pancake.

8 ounces mushrooms
3 rashers bacon
2 cloves garlic, minced
Pepper, to taste

Clean and slice the mushrooms. Finely dice the bacon and fry it until brown and crispy. Do not drain the fat. Add the garlic to the pan and stir for a couple of seconds, then add the mushrooms to the frying pan and cook until soft. Add pepper…

Serve on toast.

Since we wanted some vegetarian dishes, we left out the bacon in this recipe and it was still yummy. I think this was Giovani’s favorite dish when we had our test feast. He won’t even let us take this dish off the table so that we could serve the desserts.
