Gyngebread
Prepared by Cristiana inghen Mec-Bead Served at EKU in
Ruantallan November 2004
1 cup honey 2 cups fine bread crumbs 2 tsp ground ginger ¼ tsp white
pepper 1. Bring honey to a boil in a pot with a candy thermometer, stirring
constantly 2. Bring to 260 degrees or “hard ball” on thermometer. 3.
Remove from heat and mix in bread crumbs and spices. 4. Pat into greased pan.
(It’s hot!!! Use a spoon or let the mixture cool some before using
hands. (Optional: dot with whole cloves). Can be cut after cooling and
hardening.
