Haddock In Garlic Marinade

4 x 6 oz (175 g) Haddock cutlets
2 tsp lemon juice
salt and freshly ground black pepper
3 garlic cloves, crushed with a little salt 4 - 5 tbsp oil
2 tbsp (1 oz) 25 g butter
1 tbsp chopped fresh parsley

Method
1. Preheat the oven to 400°F (200°C) Gas Mk 6.
2. Rinse and dry the Haddock. Sprinkle over the lemon juice and leave for 15 minutes.
3. Sprinkle salt and pepper to taste on both sides of the cutlets.
4. Place the garlic and oil in a bowl, mix well and dip the cutlets into this mixture until they are well coated with the marinade.
5. Place the cutlets in an ovenproof dish and dot each with butter.
6. Bake in the oven for 15-20 minutes, basting with the marinade from time to time.
7. Sprinkle over the parsley and serve at once.
