Giacosa Epityrum album, nigrum, varium sic facito. Ex oleis albis, nigris variisque
nucleos eicito. Sic condito. Concidito ipsas, addito oleum, acetum, coriandrum,
cuminum, feniculum, rutam, mentam. In orculum condito, oleum supra siet. Ita
utito. Make green, black, or varicolored epityrum in this way. Pit the green black
or varicolored olives. Season them thus: Chop them, and add oil, vinegar,
coriander, cumin, fennel, rue, mint. Put them in a small jar, with oil on top,
and they are ready to use. Pit the olives, then pix them in a blender with the herbs, olive oil, and
vinegar. Avoid the temptation to add any salt, since the olives we buy today are
already sufficiently salted. When we had our test feast, Her Excellency Esperanza and His Excellency
Seumas joined us at the Golden Oak Inn and I think that this was Her
Excellency’s favorite dish. She even went home with all of the leftovers. Serves 6 to 8
