Assaturam: Assam a furno simplicem salis plurimo conspersam cum melle infers.

Roasted meat: The meat is roasted plain in the oven, sprinkled generously with salt. Serve with honey.

This method of roasting gives a delicious flavor to any of various types of meat. Try it with beef, veal, pork, or lamb shanks. Take the piece of meat you have chosen and roll it generously in salt before placing it in the oven. Temperature and roasting times vary according to the type of meat and its weight. When it is done, remove from the oven and cover with around 2 tbsp of liquid honey. Replace in the hot unlit oven for another 5 minutes, then slice and serve.

Beef with honey on it is absolutely amazing. We cooked this dish on the barbeque, it was quite a warm day and the oven was being used for bread baking.

Serves 6 to 8
